Healthy Chocolate Souffles!!

Who doesn't love chocolate souffle?  So light, airy, and heavenly!  What I don't like is the guilty feeling afterwards, and thinking about all those added calories going straight to my waistline....no bueno!  

I saw a recipe on Pinterest for a healthier version of souffle made with vanilla greek yogurt.  I did a little modifications, to make my version even healthier (plain low fat greek yogurt, white rice flour, and a sugar substitute) and to change it from vanilla to chocolate.  Souffles tend to get a bad rap, branded as difficult to make.  For those of you concerned about the difficulty factor in this recipe, it couldn't be any easier!  I never expected that these would turn out to be so scrumptious; light, fluffy, a little bit tangy, and GUILT FREE!!!



Ingredients

1 cup plain non-fat greek yogurt (I use Chobani)
3 large eggs, yolks separated from the whites
3 tbsp white rice flour
3tbsp unsweetened cocoa powder
1 tsp vanilla extract
1/8 tsp salt
1/8 tsp cream of tartar
1/4 cup sugar substitute, I use Z Sweet
butter for greasing


Directions

  1. Preheat oven to 375 degrees
  2. Butter 3-4 6 oz ramekins; coat with sugar, and tap out excess.  Place on a cookie sheet.
  3. In a large mixing bowl whisk together the yogurt, egg yolks, flour, salt and vanilla extract.
  4.   Using your stand mixer, beat the egg whites and cream of tartar until foamy.  Gradually pour in the sugar and whisk until firm, but soft peaks form.
  5. Add one third of egg white mixture to the yogurt mixture and combine, then carefully fold in another third, then the remaining.
  6. Divide evenly into ramekins.  Fill to the line just below the rim because when they fall you still want to have volume in the ramekin.
  7. Place the cookie sheet in the oven and bake for about 15 minutes, until evenly risen and lightly browned around the edges.
  8. DO NOT OPEN THE DOOR TO PEEK :)
  9. Serve immediately with a little powdered sugar, or chocolate shavings


You can wrap these and store in the refrigerator, they won't stay as light & airy but will become more of a cheesecake consistency (still delish!)

    Love the healthy twist on the recipe, I find that I always have to tweak baking recipes to make them more figure-friendly :)
